Oat bran muffins with carrot and pineapple

Recipe Ingredients for Morning Glory Muffins

3/4 cup flour
3/4 cup bran
3/4 cup white sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 salt
1/4 tsp ginger
1/4 tsp nutmeg
1/8 tsp allspice
1/2 cup fat-free sour cream
1/4 cup vegetable oil
1 egg
3/4 cup carrot, shredded
14 ounce pineapple, drained, crushed

Recipe Directions for Morning Glory Muffins

MIx all dry ingredients in a large bowl. Whisk together oil, sour cream and egg. Mix gently until still lumpy. Fold in carrot and pineapple until just mixed. Spoon into muffin cups and bake in 400F oven for 15-17 minutes until toothpick comes out clean.
