Recipe Ingredients for Morning Glory Muffins

1 (medium) orange, UNPEELED
1 cup raisins
1/2 cup nuts, chopped
1/2 cup orange juice
1 (large) egg, lightly beaten
1/2 cup butter or margarine, melted
1/2 teaspoon salt
3/4 cup sugar
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda

Recipe Directions for Morning Glory Muffins

  1. Wash UNPEELED orange well and quarter. Put orange and raisins through grinder or food processor. Mix in nuts.

  2. Combine juice, sugar, salt, butter (melted), and egg (lightly beaten). Add fruit and nut mixture.

  3. In a separate bowl, combine flour, powder, salt and soda. Blend into moist ingredients.

  4. Bake in grease muffin tins or bread pans at 350 for 15 - 20 minutes or until inserted toothpick comes out dry.
