Recipe Ingredients for Morning Glory Muffins

2 1/4 cups flour
1 tbsp cinnamon
1/2 tsp salt
1 apple - shredded
3 eggs
1 cup vegetable oil
1 1/4 cups sugar
2 tsp baking soda
2 cups grated carrots
1/2 cup raisins
1/2 cup walnuts, chopped
8 ounce pineapple, drained
1 tsp. vanilla

Recipe Directions for Morning Glory Muffins

Preheat oven to 350 deg. Grease 16 muffin cups. Sift flour, sugar, cinnamon, baking soda and salt into a large bowl. Stir in carrots, apple, raisins, nuts and pineapple. In separate bowl, whisk eggs with oil and vanilla. Stir wet ingredients into dry ingredients mixing well. Spoon into muffin cups almost to top. Bake approx 35 minutes or until toothpick inserted into centre comes out clean.
