Recipe Ingredients for Morning Glory Muffins

2 cups flour
1 1/4 cups sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
3 eggs
1 cup vegetable oil
2 cups carrots
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup pecans
1 large apple
2 tsp vanilla

Recipe Directions for Morning Glory Muffins

Preheat oven to 350. Grease 24 large muffin cups. Mix flour, sugar, baking soda, cinnamon, and salt in a large bowl. Stir in carrots, raisins, coconut, and pecans. Combine eggs, oil, apple, and vanilla in a large bowl; stir well. Add egg mixture to flour mixture; stir just until combined. Spoon batter into muffin cups. Bake for about 15 minutes, or until toothpick inserted into the center comes out clean.
