nice healthy muffins, w/banana, apples, and raisins. Original recipe called for egg substitute, but I used eggs and added bananas.

Recipe Ingredients for Morning Glory Muffins

1 c. all purpose flour
1 c. whole-wheat flour
3/4 c. sugar
2 t. baking soda
2 t. ground cinnamon
1/4 t. salt
2 eggs
1/2 c. vegetable oil
1/2 c. unsweetened applesauce
2 t. vanilla
2 c. chopped apples
1/2 c. raisins
3/4 c. grated carrots
2 large bananas, ripe & nashed

Recipe Directions for Morning Glory Muffins

  1. Preheat oven to 350F. Line or grease muffin pan.

  2. In a large bowl, combine the flours, sugar, baking soda, cinnamon and salt. Whisk to blend evenly.

  3. In a separate bowl, add the egg, oil applesauce, vanilla, and banana. Stir in the apples, raisins and carrots. Add to the flour mixture and blend just until moistened but still slightly lumpy.

  4. Spoon the batter into muffin cups, filling each about 2/3 full.

  5. Bake until springy to the touch, about 35 min. Let cool.
