Recipe Ingredients for morning glory muffins

1 cup sugar
1 1/4 cups flour
1 cup whole wheat flour
1 T cinnamon
2 tsp baking soda
1/2 tsp salt
1/2 cup coconut, shredded
3/4 cup raisins
1 apple, peeled and shredded
8 oz crushed pineapple, drained
1/3 cup pineapple juice, drained from above
2 cups carrots, shredded
3 eggs
2/3 cups canola oil
1 tsp vanilla
1/4 cup walnuts, chopped

Recipe Directions for morning glory muffins

  1. Preheat oven to 350 degrees.

  2. Line muffin pans with paper cupcake liners.

  3. In a large bowl, whisk together sugar, flours, cinnamon, baking soda and salt. Add the coconut, raisins, apple, pineapple and carrots and stir to combine.

  4. In a separate bowl, whisk the eggs with the oil and vanilla and reserved 1/3 cup pineapple juice and nuts. Pour into the bowl with the dry ingredients and stir until just combined.

  5. Spoon the batter into prepared muffin pans, filling each cup 3/4 full. Bake for 25-30 minutes or until a toothpick inserted into middle comes out clean. Cool muffins in the pan for 5 minutes, then turn out onto a rack to finish cooling.

  6. Makes 24 muffins.
