Muffins I made that are good for you non-breakfast eaters, and are fairly healthy. My husband likes to use them as a substitute for more costly snack and appetite control bars sold at the store.

Recipe Ingredients for Morning Glory Muffins

2 1/2 cups whole wheat flour
1 1/4 cups brown sugar
3 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
3 eggs
1/4 cup honey
3/4 cup applesauce
1/2 cup canola or olive oil
1 tsp vanilla extract
1/2 cup chopped pecans
2 cups grated carrots
1 apple, peeled and finely chopped
8 oz. canned, crushed pineapple
1/4 cup pineapple juice
1/2 cup coconut flakes
1/2 cup raisins

Recipe Directions for Morning Glory Muffins

  1. Pre-heat oven to 350F degrees. Line muffin pans with cupcake liners.

  2. Combine first four ingredients in a large bowl.

  3. In another bowl, combine eggs, honey, applesauce, oil and extract. Mix well and add in remaining ingredients.

  4. Take this mixture and slowly pour it into the first bowl and mix everything together.

  5. Bake for 20-24 minutes in regular muffin pans or until a toothpick comes out clean from center muffins. Allow to cool before storing.
