Recipe Ingredients for Morning Glory Muffins

2.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 cup Sugars, Granulated
2 tsp Baking Soda
1 tbsp Cinnamon, Ground
8 oz Crushed Pineapple in Its Own Juice
2 cup, grated Carrots
1 medium apple Apples
6 tbsp Coconut
0.5 cup, chopped Pecans
0.75 cup, packed Raisins, Golden Seedless
8 oz Coconut Oil, Unrefined, Organic
3 large Egg, Whole
1 tsp Vanilla Extract

Recipe Directions for Morning Glory Muffins

  1. Mix all dry ingredients together in a large bowl. Wisk together melted coconut oil, eggs and vanilla. Add to the bowl mixing well.

  2. Preheat oven to 350. Spoon muffin dough into greased muffin pans to almost capacity and bake for 20-30 minutes. Check for doneness with a toothpick.
