I got the original recipe from the Mayo Clinic website. I adapted it to reduce oil and sugar, added banana and blueberries.

Recipe Ingredients for Morning Glory Muffins - 15 muffins

1 cup white flour
1 cup whole wheat flour
1/4 cup white sugar
1/4 cup brown sugar
2 t. baking soda
2 t. cinnamon, ground
1/4 t. salt
2 t. vanilla extract
1 1/2 cups apples, unpeeled, chopped
1/2 cup blueberries
1/4 cup dried cranberries
3/4 cup egg substitute
1/4 cup vegetable oil
3/4 cup unsweetened applesauce
1 banana, mashed
1/4 cup coconut
3/4 cup carrots, grated
2 T. pecans, chopped

Recipe Directions for Morning Glory Muffins - 15 muffins

  1. Preheat oven to 350.

  2. Spray muffin pan w/no stick spray.

  3. In large bowl combine flours, sugar, baking soda, cinnamon and salt. Whisk to blend.

  4. In another bowl, add egg sub, oil, applesauce and vanilla. Stir in fruit and veggies.

  5. Add to flour mixture and blend until moistened but still slightly lumpy.

  6. Spoon batter into muffin cups. Sprinkle w/pecans.

  7. Bake for approx. 35 minutes.
