Recipe Ingredients for Morning Fruit Muffins

1 1/2 cups flour
1/4 cup whole wheat flour
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
2 eggs
1/4 cup canola oil
3/4 cup buttermilk
2 tbsp sour cream
1 tsp vanilla
2 1/2 cups chopped pears

Recipe Directions for Morning Fruit Muffins

  1. Preheat oven to 375.

  2. Grease standard muffin tin.

  3. Mix dry ingredients. Gently stir in fruit to coat.

  4. Blend wet ingredients. Mix with dry, stirring only to moisten

  5. Spoon into prepared muffin tin. Bake 20 - 25 minutes (or until golden), until tops are dry and springy to touch.

  6. Remove from oven. Cool about 8 minutes. Turn out to cool on rack.
