Recipe Ingredients for Moosewood's Navajo Stew

2 sweetpotato, 5" long Sweetpotato
2 medium raw Bell Pepper Green
1 large Onions
4 clove Garlic
1 tbsp Vegetable Oil, Canola
1 tbsp Vegetable Oil, Canola
1 tbsp Extra Virgin Olive Oil
1 serving Ground Cumin
1 tsp Sea Salt
0.25 tsp Pepper, Black
1.5 cup Tomatoes, Red, Ripe
0.882 oz Chipotles In Adobo Sauce Peppers
1.25 cup Butter Beans ' Large
1 serving Cilantro leaves

Recipe Directions for Moosewood's Navajo Stew

Mix oil and dried spices in 13 X 9 baking pan. Add diced sweet potato, chopped pepper, diced garlic and wedged onion. Roast at 450 for 30 minutes, stirring at least once. Meanwhile, puree tomatoes, chipotles, cilantro. Add tomato mixture to veggies along with butter beans. Roast another 10 minutes to heat through.
