Delicious creamy potato base with petit diced vegetables, yumm...Vegan version with beans.

Recipe Ingredients for Moosewood Summer Vegetable Soup

8 oz dried white beans, soaked overnight
2 large potatoes, scrubbed and cubed
2 1/2 cups water
1 cup peas
1 cup corn
2 tbs extra virgin olive oil
1 cup onion, diced
3 medium carrots, diced
1 cup broccoli florets, chopped
1 red pepper, diced
2 small zucchini, diced
1/4 cup fresh basil, chopped
1 cup soy milk

Recipe Directions for Moosewood Summer Vegetable Soup

  1. Boil white beans about 1-2 hrs until firm but tender, drain and rinse.

  2. Boil potatoes in 2.5cups water until tender, transfer to a blender and puree. Set aside and add peas and corn (remain whole).

  3. In a large stock pot, heat oil over med high and saute onions about 8 min. Add each remaining vegetable in the order above, one at a time, saute each about 8 min. Add basil.

  4. Stir in potato puree with corn and peas, add beans.

  5. Add soy milk gradually as you bring up the heat of the soup, do not boil.

  6. Serve!
