Recipe Ingredients for Moosewood Quinoa Stuffed Peppers

6 oz Onions
10 oz Peppers, Sweet, Red
10 oz Peppers, Sweet, Green
2 oz Orange Hothouse Bell Pepper
2 oz Peppers, Hot Chili, Red
4 oz Carrots
4 oz Celery
12 oz Squash, Summer, Zucchini, Includes Skin
1 cup Corn, Sweet, Yellow
8 oz Tomatillos
14.5 oz Diced Tomatoes No Salt Added
1.5 tsp Cumin
1.5 tsp Spices Ground Coriander
0.5 tsp Spices Crushed Red Peppers
0.5 tsp Sea Salt
1 cup Quinoa
3 clove Garlic
4 oz Reduced Fat 4 Cheese Mexican Shredded Cheese

Recipe Directions for Moosewood Quinoa Stuffed Peppers

  1. Prepare quinoa according to instructions.

  2. Saute all other ingredients (in batches if needed) - except cheese - in olive oil.

  3. Cover vegetable mixture and cook on low for about 5 minutes until tender.

  4. Combine quinoa when done cooking with vegetables, add to large casserole dish (I used 2 9x9s), and top with cheese.

  5. Bake at 375 for 15 minutes or until bubbly.
