Recipe Ingredients for Moosewood pumpkin apple muffin

6 tablespoons butter
1/2 cup sugar
1 egg
150 ml non-fat milk
1/2 tsp vanilla extract
3/4 cup canned pumpkin
1 cup chopped apple
2 cups white flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon

Recipe Directions for Moosewood pumpkin apple muffin

  1. Cream butter and sugar until smooth

  2. Beat in egg and then milk and vanilla

  3. Fold in fruit and pumpkin

  4. In a separate bowl, sift together flour, baking powder, baking soda, salt and cinnamon and mix well

  5. Add the wet ingredients to the dry ingrediants and fold together with a rubber spatula without overmixing

  6. Spoon about 1/3 cup of batter into each muffin cup

  7. Immediately place the muffins in the oven and bake for 30 to 35 minutes, until puffed and golden

  8. After about 20 minutes rotate the muffin tin to ensure even baking

  9. Remove from oven and cool for about 15 minutes
