Recipe Ingredients for Moong and Paneer Broth

100 grams Cottage Cheese, Nonfat, Uncreamed, Dry, Large Or Small Curd
4 oz Moong Beans
1 tbsp Soy Oil
1/2 tsp Cumin Seed
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 tsp Ginger Root
3/4 oz Peppers
3/4 fl oz Lemon Juice
1 cup Noodles, Egg
4 dash Salt

Recipe Directions for Moong and Paneer Broth

  1. Cut paneer into 1/2 inch cubes.

  2. Finely chop spring onions,ginger,green chillies

  3. Pressure cook moong beans with 2 cups of water and salt till done.Cool and grind to a smooth puree.Strain and add four cups of water and stir to make a thin broth.

  4. Heat oil in a wok;add cumin seeds.When they begin to change colour,add spring onions and ginger and saute over medium heat for half a minute.

  5. Add green chillies and continue to saute for half a minute longer.

  6. Add the moong broth and bring to a boil. Lower heat, add lemon juice,adjust seasoning and simmer, uncovered for five minutes.

  7. Stir in the paneer and simmer for half a minute.

  8. Add noodles before serving and ladle into individual serving bowls.

  9. Serve hot.
