Recipe Ingredients for moon cake, snow skin

130 g Cooked Glutinous Rice Flour (Gao Fen) Sifted
160 g powdered sugar
130 ml boiled carrot, dragonfruit juice or screwpine leaves juice
2 tbsp fresh milk
1 tbsp shortening (I use Crisco)
1 kg Moocake paste (Red Bean, Lotus, Green tea)
3 tbsp Sugars, Granulated (lightly toasted)
80 grams Orzo Melon Seeds

Recipe Directions for moon cake, snow skin

  1. Method:

  2. Squeeze the juice and heat till boiling point. Cool the juice in fridge for about 4-6 hours.

  3. Sieve together the icing sugar and cooked glutinous flour.

  4. Add in the shortening. Combine until the mixture resembles bread crumbs.

  5. Add in the juice and milk. Mix to a soft and smooth dough. Let it rest for 10 minutes.

  6. Divide the dough in 60g and roll into a ball. Wrap each ball with cling wrap until ready to use.

  7. Filling:

  8. Rinse azuki beans under running water clearly. In a big saucepan, then soak bean in cold water for at least 3 hours.( the ratio between them is 1:3)

  9. After time is up, bring soup into a boil over high heat.

  10. Turn heat down to low, continue simmer for 30 minutes or 1 hour until azuki bean are broken up and soft.

  11. to make dry and thick red bean paste, so I just pour off the excess liquid of soup. But don?t discard, you can just refrigerated and drink like juices.

  12. Add rock sugar to the saucepan, stirring frequently.

  13. Press and stirring until the red bean paste was mashed into tiny texture.

  14. Add melon seeds to mooncake paste.

  15. Roll it tightly into a ball of 120g each (note that these can be made smaller one serving is listed here as 50 grams)
