Moo Shu Vegetables Recipe

Leave out the eggs for a vegetarian dish and/or to reduce total calories.

Recipe Ingredients for Moo Shu Vegetables

12 ounces broccoli slaw
2 cups cabbage, shredded
6 scallions, diced
4 eggs
2 tsp sesame oil
1 tsp canola oil
2 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp chili paste
2 tsp minced ginger
3 cloves garlic, minced

Recipe Directions for Moo Shu Vegetables

  1. Heat canola oil in large skillet over medium heat.

  2. Lightly beat eggs, add to skillet and cook until just set.

  3. Remove eggs from pan and set aside. Wipe out the pan.

  4. Heat 2 tsp sesame oil in same skillet over medium heat.

  5. Add ginger and garlic. Cook until fragrant, about 1 minute.

  6. Add broccoli slaw, hoisin sauce, chili paste, soy sauce, rice vinegar and half of scallions to skillet. Cook, stirring occasionally, for 2 minutes.

  7. Add cabbage to skillet and cook an additional 1 - 2 minutes. The idea is too keep some crunch in the veggies.

  8. Remove skillet from heat.

  9. Add eggs back into pan and combine thoroughly while also chopping the eggs into small pieces.

  10. Serve immediately. Also makes great leftovers.
