A low carb, high protein moo shu chicken.

Recipe Ingredients for Moo Shu Chicken

2 cups coleslaw, shredded
1/2 cup onion, chopped
1/4 cup red pepper, slices
1/4 cup spinach, shredded
4 ounces chicken thighs, chopped
2 eggs

Recipe Directions for Moo Shu Chicken

  1. Make crepes out of eggs (can use egg substitute)

  2. Fry onions and red pepper. Add coleslaw and cooked chicken.

  3. Add one tablespoon Carla's moo shoo sauce. Heat.

  4. Pile in crepes and serve with additional moo shu sauce.
