Recipe Ingredients for Monterey Rice Chicken Casserole

1/2 c. 1% cottage cheese
6 oz. fat free cream cheese
1/2 c. sour cream
10 3/4 oz. cream of chicken soup
1 tsp. salt
1/8 tsp. garlic powder
14 oz. tomatoes with green chilies
3 c. chicken, cooked, chunked
3 c. brown rice, cooked
1 c. Monterey Jack cheese, grated
6 oz. corn chips, crushed

Recipe Directions for Monterey Rice Chicken Casserole

  1. Blend cottage cheese, cream cheese, and sour cream until smooth.

  2. Add to remaining ingredients (except chips).

  3. Pour into a 13 x 9 pan and sprinkle with corn chips.

  4. Bake at 350 for 25-30 minutes.

  5. Can also be split in half for 2 9x9 pans.
