This hearty chili has a lot of fresh veggies and low fat meat.

Recipe Ingredients for Montana Chili

1 lb ground buffalo
1 zucchini
1 yellow squash
1 cup corn
14 oz. black beans
2 bell peppers
2 jalepeno peppers
1 yellow onion
3 cloves minced garlic
2 tablespoons olive oil
12 oz. diced tomatoes
8 oz. tomato sauce
1 tbsp. chili powder
1 tbsp. salt
1/2 tbsp. pepper

Recipe Directions for Montana Chili

  1. dice up all fresh veggies and saute with garlic and oil in deep pot

  2. brown meat in separate pan

  3. When veggies are starting to soften, add in browned meat, tomato sauce, can of diced tomatoes, drained can of black beans, and all spices

  4. Let simmer for 20 min. to blend seasoning

  5. Serve over indian fry bread if available

  6. Can garnish with shreadded cheese
