Recipe from the Sneaky Chef - banana oatmeal flavored squares laced with sweet potato and carrots! Really yummy my 3 1/2 year old daughter loves em!

Recipe Ingredients for Monkey Bars

5 tbs Becel Light Margarine
1 c splenda
1/2 c whole wheat flour
1/4 c bran
1 sweet potato
2 carrots
2 bananas
2 egg yolks
1/2 c rolled oats
1/2 tsp cinnamon

Recipe Directions for Monkey Bars

  1. Boil sweet potato and carrots until tender (20 minutes) and puree adding no more than 3 tbs of water to smooth it out

  2. Preheat oven to 325

  3. Grease and flour 9" square pan

  4. in a saucepan, melt butter and splenda

  5. Remove from heat, cool, then whisk in (pureed veggies), bananas and vanilla, and egg yolks

  6. Add oats, flour, bran and cinnamon; mix until all combined

  7. Pour the entire mixture into the prepared baking dish and bake 37-39 minutes until toothpick comes out clean

  8. If desired, drizzle melted chocolate in a thin striped pattern across the tops of the bars
