Recipe Ingredients for Monique's Pumpkin Pudding

2 large Eggs, Whole
15 oz Canned pumpkin, Without Salt
12 oz 2% evaporated milk
3/4 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/2 tsp salt
1 tsp vanilla extract
8 tsp pecans, chopped

Recipe Directions for Monique's Pumpkin Pudding

  1. Preheat oven to 350F

  2. Spray 8 half-cup ramekins with non-stick cooking spray

  3. In large bowl, mix all ingredients except nuts

  4. Divide among ramekins

  5. Place dishes in a 9"x13" baking dish with enough water to cover bottom of sheet

  6. Bake 45 minutes

  7. Remove from oven and sprinkle with chopped pecans
