Zucchini, cheese, ground beef and sauce casserole. Ready in about 1 hour.

Recipe Ingredients for Mom's Zucchini and Meat Casserole

1 pound Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
4 cups tomato sauce
1/2 cup breadcrumbs
2 medium zucchinis, chopped
1 tbsp olive oil
10 ounce Mozzarella, Part Skim Milk Cheese

Recipe Directions for Mom's Zucchini and Meat Casserole

  1. Heat olive oil in large pan.

  2. Saute zucchini in olive oil. The zucchini should still be crisp.

  3. Brown ground beef in pan.

  4. Set aside enough sauce and mozzarella to cover the top of the casserole.

  5. Mix zucchini, ground beef, breadcrumb, and remaining tomato sauce and mozzarella in a large bowl.

  6. Spread in 9x13 inch pan.

  7. Spread a little sauce over the top of the casserole.

  8. Sprinkle the remaining cheese over the sauce.

  9. Bake uncovered in the oven for 20 minutes at 400 degrees.

  10. Let stand 5 minutes and serve.
