Makes 8 servings



Mom's French country veggie soup served the tomatoes diced on top of soup right before you eat. Can be blended or eaten as is.

Recipe Ingredients for Mom's Veggie Soup

2 ounces olive oil
1 1/2 cup carrots
1 1/2 cup red potatoes
1 1/2 cup yellow onion
1 1/2 cup parsnip
2 cups leeks
1 1/2 cup celery
7 cups organic chicken broth

Recipe Directions for Mom's Veggie Soup

  1. Sautee onions, carrots and celery until golden. Add potatoes and parsnip until golden. Add leeks until they wilt a little (2-3 minutes) then add chicken broth.

  2. Bring to a boil, then back down to a simmer until potatoes are soft.

  3. Either serve as is, or put in blender to puree.

  4. Chop tomatoes and serve on top of soup
