Recipe Ingredients for Mom's vegetarian spaghetti sauce

23 lbs Roma tomatoes
24 ounces tomato paste
1 cup chopped fresh parsley
2 tablespoons of oregano
2 tablespoons of basil
2 tablespoons of salt
3/4 teaspoon bay leaf
3 cups diced green pepper
4 cups diced onions
1 lbs fresh mushrooms
6 cloves garlic
1/4 cup oil
36 ounces meal starters sausage style recipe crumbles
16 ounces Worthington Prosage
12 oz. grated parmesan romano cheese

Recipe Directions for Mom's vegetarian spaghetti sauce

  1. blanche, split and cook the tomatoes. Add one bunch of fresh parsley minced in the food processor, the spices--cook down and then use immersion blender to make a smooth sauce.

  2. Dice 3 cups green peppers, 4 cups diced onions, 1 lb fresh mushrooms-sliced and quartered, 6 big cloves garlic, sprinkle with Lowry's seasoned slat and smoked paprika all over and saute in largest skillet covered with lid till soft with 1/4 cup oil.

  3. Add 3 bags frozen Morningstar sausage crumbles, italian recipe, and 1 roll of prosage. Whe meat and veg is hot clear through, add 12 oz of Parmesan/Romano cheese grated. Mix thoroughly to incorporate cheese into all the mixture.

  4. Combine all of the above and stir thoroughly. Cool and packge in pint sized zip-loc bags and freeze.
