Recipe Ingredients for Mom's Sweet and Sour Chicken

1 1/2 lbs boneless skinless chicken breast
1/4 cup apple cider vinegar
1/4 cup soy sauce
1/4 cup brown sugar
40 oz pineapple chunks in juice
3 chopped green peppers
2 tbs corn starch

Recipe Directions for Mom's Sweet and Sour Chicken

  1. Drain pineapple, reserve the juice from one can

  2. Dice chicken and cook in skillet until brown, drain fat. Add 1/2 cup water and simmer.

  3. Put 1/4 cup sugar, and 2 tbs corn starch in a sauce pan.

  4. Add reserved pineapple juice

  5. Add 1/4 cup apple cider vinegar

  6. Add 1/4 cup soy sauce

  7. Cook sauce on medium heat and stir continually until sauce starts to bubble and changes from a tan, to a rich, dark brown color throughout.

  8. Remove from heat immediately or sauce will stick.

  9. Add pineapple chunks to the chicken.

  10. Pour sauce over pineapple chunks and chicken.

  11. Continue to cook on low heat until mixed completely.

  12. Cut up 3 green peppers and add to mixture approximately 2 minutes prior to serving.

  13. Suggested to place serving over 1 cup of white or brown rice.
