And old standby Mom used to make along with the Peas in White Sauce and boiled potatoes. Yum! She never measured so this is approximate amounts. These also make great salmon burgers, just add about 1/4-1/2 cup shredded cheese with the mixture.

Recipe Ingredients for Mom's Salmon Croquettes

16 oz canned salmon, drained
1 tablespoon ketchup
1/4 cup egg substitute
1 tablespoon worchestershire sauce
1/2 tsp black pepper
1 tablespoon dried parsley
2 cups saltine crackers, crushed fine
1 tablespoons extra virgin olive oil

Recipe Directions for Mom's Salmon Croquettes

  1. Combine salmon, ketchup, egg, pepper, parsley and worchestershire sauce in a medium bowl and stir to combine, making sure to mash up large bits of salmon.

  2. Add about 1/2 cup of the crushed crackers. Stir

  3. Add up to 1/2 cup more of the crackers until the mixture just sticks together, but is not crumbling. (If you added to much cracker, add a little more ketchup or W sauce.)

  4. Meanwhile, heat oil in a pan.

  5. Form 5-7 balls smaller than a baseball and flatten. They should be just smaller than your palm.

  6. Coat both sides of the patty generously with remaining cracker crumbs.

  7. Fry in oil until golden brown, about 3-5 minutes on each side. Remove to a plate and keep warm.

  8. Serve!
