My mom's recipe for potato soup. Very easy and quick to make. Can also use leftover baked potatoes. Makes about 6 1-cup servings.

Recipe Ingredients for Mom's Potato Soup

4 potatoes, peeled and diced
1 onion, chopped
1/2 tsp. salt
2 cups skim milk
2 T. butter
1/2 T. parsley
1/2 tsp. pepper

Recipe Directions for Mom's Potato Soup

  1. Put potatoes, onion, and salt in saucepan. Add water until vegetables are covered.

  2. Boil until potatoes are soft. Do not drain.

  3. Mash potatoes and onion in pan.

  4. Add milk slowly while stirring.

  5. Bring soup to a simmer and add butter, parsley, and pepper. Heat until desired temperature.
