Recipe Ingredients for mom's pesto penne

1 1/2 ounces whole wheat penne
1 tablespoon walnut pieces
1 tablespoon shredded parmesan
1/2 cup fresh parsley
1/4 garlic clove
1 teaspoon lemon juice
1 tablespoon olive oil
1 1/5 ounces spinach

Recipe Directions for mom's pesto penne

  1. cook pasta, reserve 1/2 c water

  2. in food processor, puiree prsley, walnuts, parm, garlic, lemon juice, 2 tb water until paste forms. add oil in thin streem, process till smooth

  3. add pesto to pasta in pot, add 1/4 c pasta water and spinach. toss to combine, thin w/pasta water prn
