Recipe Ingredients for Mom's Oatmeal Bread

2 c boiling water
2 c rolled oats
1/2 c honey
4 1/2 t yeast (2 cakes, 2 packets)
1/2 c water, warm
2 c all-purpose flour
2 T canola oil
2 t salt
1 1/2 c whole wheat flour
1 3/4 c all-purpose flour

Recipe Directions for Mom's Oatmeal Bread

Pour boiling water over oats, add honey and let mush. Dissolve yeast in lukewarm water. When oats are cool enough, combine. Add flour to form thick batter. Beat well with spoon 100 strokes. Let rise 60 minutes. Fold in salt and oil. Fold in additional flour until dough comes away from the sides of the bowl. Knead until smooth. Let rise 50 minutes. Punch down. Let rise 40 minutes. Shape into 2 loaves. Let rise 20 minutes. Bake in 350 oven for 40-60 min; check after 20, turn. Remove from pans and cool. * can make 3 smaller loaves, reduce baking time to 20-30 min.
