Great low cal, low fat breakfast muffins that freeze well!

Recipe Ingredients for Mom's Oat Muffins

2 1/2 cups dry oatmeal
1 1/2 tsp baking powder (not soda)
1/2 tsp cinnamon
1/4 cup sugar
1 large apple (chopped)
2 bananas (chopped)
1 tsp vanilla
1 egg
2 egg whites
1 cup skim milk

Recipe Directions for Mom's Oat Muffins

  1. Stir first four ingredients together and separately the rest of the ingredients.

  2. Mix all together!

  3. Add muffin cups to pan and spray those with nonstick spray. Place approx 2 heaping tablespoons in each - even fillings - do not pat down (loose is better).

  4. Bake 40-45 minutes in heated oven.

  5. Cool - and enjoy!
