Recipe Ingredients for Mom's Minestroni Soup

1/4 cup extra virgin olive oil
1 cup onion, chopped
1/2 cup celery, chopped
75 ounces chicken broth
5 cups carrots, sliced
2 cups cabbage, shredded
28 oz can tomatoes, crushed
15 ounces cannellini beans
15 ounces kidney beans
3 zucchini, chopped
1 cup macaroni
1 teaspoon garlic powder
1/4 teaspoon pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon dried parsley
1/2 cup parmesan cheese

Recipe Directions for Mom's Minestroni Soup

  1. Heat oil in large pot on medium heat.

  2. Add onions and celery and saute 10 minutes, stirring occasionally.

  3. Add broth and bring to a boil. Reduce heat to gentle boil and add all other ingredients except beans and parmesan cheese.

  4. Puree beans in blender and add to pot.

  5. Simmer for 45 minutes to 1 hour. Add parmesan cheese and stir well.
