This recipe is easily altered adding ingredients such as mushrooms, jalepeno peppers, etc.

Recipe Ingredients for Mom's Meatloaf

1 1/2 lbs. ground beef (85% lean or greater)
3/4 c. quick oats
2 eggs, beaten
1/4 c. onion, chopped
2 t. salt
1/4 t. pepper
1 1/4 c. catsup (split use)

Recipe Directions for Mom's Meatloaf

Using only 1 c. of the catsup, combine all ingredients thoroughly and pack firmly into a loaf pan. Top meatloaf with remaining catsup. Bake at 350 degrees for 1 hr.
