Best made with Alaska King Crab, but works well with canned crab as well. Often made for Christmas or New Years holidays.

Recipe Ingredients for Mom's Macaroni Crab Salad

2 cups elbow macaroni
2 hard boiled eggs
12 oz crab meat (shredded)
3 tbs sweet pickle relish
2 tsp chopped onions
1 cup green peas
1 cup mayonaise
1 tsp salt
1/4 tsp pepper
1/2 cup grated carrots
1/2 cup chopped cucumber

Recipe Directions for Mom's Macaroni Crab Salad

  1. Grate or mince boiled eggs.

  2. Combine remaining ingredients in mixing bowl ? except for carrots.

  3. Mix by hand ? adding mayonnaise and pepper to taste.

  4. Sprinkle grated carrots on top of salad for presentation and color.
