My mom's recipe for potlucks and things for as long as i can remember. Tangy, satisfying and DELICIOUS!

Recipe Ingredients for Mom's Low-fat Parmesan Potato Salad

4 large potatoes, boiled
1 clove garlic
1/4 cup sliced green onion
1/2 cup fat-free parmesan cheese
1/4 cup chopped parsley
3 tbsp. white wine vinegar
1/2 tsp. Dijon mustard
1/8 tsp. salt

Recipe Directions for Mom's Low-fat Parmesan Potato Salad

  1. Peel potatoes & cut into quarters. Boil with garlic until tender.

  2. Dice potatoes.

  3. Add green onion.

  4. Combine vinegar & mustard

  5. Gently mix potatoes with mixture, adding in Parmesan & parsley as you mix.
