Recipe Ingredients for Mom's Lentil Soup

1 1/3 cups lentils
1 1/4 cups carrots, chopped
2/3 cup leeks (light green and white parts only), diced
1 1/4 cups onion, diced
2 cloves garlic, minced
4 2/3 cup water
1 tsp salt
1/4 tsp black pepper
3 tbsp fresh parsley
1 3/4 cup tomatoes, diced
2 tbsp balsamic vinegar

Recipe Directions for Mom's Lentil Soup

  1. Rinse the lentils. Add lentils, vegetables, and water to a large pot and bring to a boil. Add salt, pepper, and parsley.

  2. Cover, reduce heat, and simmer for 90 minutes.

  3. Add tomatoes and vinegar and simmer for another 15 minutes.
