delicious roasted easy lemon pepper chicken (I estimate each serving at about 5.6 oz)

Recipe Ingredients for moms lemon pepper chicken

5 lb whole chicken
1/4 cup olive oil
1/4 cup lemon juice
4 cloves garlic
1 teaspoon dijon mustard
1 fresh ground pepper

Recipe Directions for moms lemon pepper chicken

  1. butterfly the chicken

  2. in a separate bowl mix lemon juice, pepper, olive oil, mustard and finely chopped garlic.

  3. whisk

  4. flip chicken, meat side down, bone side up.

  5. each side, pull the skin back, not off but back.

  6. slide a garlic clove and lemon slice under each skin.

  7. rub mixture all around including the slit skin.

  8. flip chicken finish the mixture on other side

  9. bake around 2.5-3 hrs at 350
