My Spanish mother's recipe for the traditional Spanish dessert

Recipe Ingredients for Mom's Flan

2 cup Sugars, Granulated
48 oz Skim Milk Fat Free

Recipe Directions for Mom's Flan

  1. In a large, oven safe pot (this is your mold), heat 1 cup sugar on low until caramelized (liquid & brown); tilt to spread melted sugar on sides & bottom; set aside to cool

  2. In another pot, scald milk (heat on low-medium, stirring occasionally until not quite boiling)

  3. In a large bowl whisk together eggs, remaining 1 cup sugar, and vanilla (Mom prefers to use 1 1/2 tsp vanilla extract & 1/2 tsp lemon extract, it just depends what she has on hand)

  4. When milk is scalded, slowly & carefully pour milk into the egg mixture while whisking constantly (be careful, if you pour the hot milk in too fast it can cook the eggs)

  5. Pour milk mixture into caramel coated mold

  6. Place mold in a hot water bath and bake in oven at 375 degrees for 40 minutes

  7. Let cool & refrigerate over night

  8. To serve, invert the mold into a wide, shallow bowl (there will be a lot of liquid caramel sauce, so you need a bowl, not a plate)

  9. This recipe can be halved easily; just use a medium pot for your mold instead of a large one
