Serving size is one half enchilada

Recipe Ingredients for Mom's Enchilada's

12 flour tortillas
10 oz enchilada sauce
3/4 lb beef chuck
3/4 cup shredded cheddar cheese

Recipe Directions for Mom's Enchilada's

  1. Brown 3/4 lb ground beef in pan. Stir in 1 10 oz can Old El Paso enchilada sauce, mild. Sprinkle in 1/4 c. cheese. Mix well.

  2. Scoop about 1/2 cup beef and sauce mix into a flour tortilla. Roll it up and place in 9 X 13 pan. Repeat until pan is full.

  3. Pour remaining beef and sauce over rolled tortillas. Spread the rest of the cheese over the top of the enchiladas.

  4. Bake on 350 F for 15-20 minutes, or until cheese is fully melted.

  5. Let stand 5 minutes. Cut tortillas into halves and seperate from eachother. Serve with optional dollop of sour cream.

  6. Makes 24 half-enchiladas.
