Recipe Ingredients for Mom's Egg Salad

8 eggs, hard boiled
3 tbsp. vinegar
3 tbsp. mayonnaise (light)
2 tbsp. kale, finely chopped
2 tbsp. onion, finely chopped
1 tsp. mustard
1/4 tsp. pepper

Recipe Directions for Mom's Egg Salad

  1. Bring 8-10 cups water to a rolling boil. Add vinegar.

  2. Slowly add eggs to boiling water. Cook on high for approx. 15 minutes.

  3. Remove, cool and shell the eggs.

  4. In medium size bowl, chop eggs with pastry mixer or fork. Add all remaining ingredients and stir to blend.

  5. Enjoy on bread, crackers, pita pockets.
