Recipe Ingredients for mom's easy meatloaf

1 lb ground beef
20 saltine crackers, crushed
1 large egg
1/3 c onion, chopped
2 c tomato juice (more or less to taste)
2 T jalepenos

Recipe Directions for mom's easy meatloaf

Mix beef, crackers, egg, onion, jalepenos, and 1 c tomato juice. Form into a meatloaf. Pour remaining cup of tomato juice over the top and bake at 350 degrees until done.
