Mom's Corn Pudding Recipe

One of my favorite Mom recipes. This is definately a southern dish! We swapped out some of the ingredients to make it a little lighter.

Recipe Ingredients for Mom's Corn Pudding

3 tablespoon butter
3 tablespoon flour
1 tablespoon splenda
1 1/4 cup skim milk
14 1/2 oz creamed corn
2 eggs

Recipe Directions for Mom's Corn Pudding

  1. Melt butter or margarine in small saucepan.

  2. Stir in flour, salt, and sugar. Keep stirring constantly until mixture thickens and boils.

  3. Stir in corn and fold in beaten egg.

  4. pour into greased one quart casserole dish and set in pan of hot water.

  5. Bake 15 minutes at 375 degrees.

  6. Lower temperature to 350 degrees and continue baking about 30 minutes until set.
