Mom's Cookies with Amaranth, Oats, and Dried Fruit

Recipe Ingredients for Mom's Cookies

1 1/2 cups rolled oats
1/2 cup amaranth
1/2 cup almonds, toasted and chopped
4 oz Dried Cherries
1/2 cup Apricots, Dried, Sulfured, Uncooked
1/4 cup honey
2 large egg whites
1 Kosher salt

Recipe Directions for Mom's Cookies

  1. Combine oats, amaranth,

  2. macadamia nuts, dried fruit,

  3. and honey in a medium bowl.

  4. Whisk egg whites with 1/4 teaspoon

  5. salt until foamy. Pour over

  6. dried fruit and stir to combine.

  8. Preheat oven to 350 degrees. Line

  9. a baking sheet with parchment.

  10. Scoop 3 tablespoons mixture

  11. (using an ice cream scoop)

  12. and pat into a 3-inch round

  13. on baking sheet. Bake, rotating

  15. golden brown, 15 to 18 minutes.

  16. Let cool completely.

  17. Store in an airtight container
