Mom's Chicken Salad Recipe

This chicken salad is made without mayo. I use plain yogurt where the liquid has mostly been removed (this will have a texture like mayo or sour cream). I serve this either on a salad, with bread (like a sandwich), or just with crackers. I sometimes add, or replace with, other spices (Spike, garlic salt) to change it up. Serving size is about 1/2 cup.

Recipe Ingredients for Mom's Chicken Salad

13 ounce canned chicken breast
1/2 medium onion, diced
1/2 yellow pepper, diced
1/2 carrot, diced
1 stalk celery, diced
1/2 cup plain yogurt
1/4 tsp celery salt
1/8 tsp pepper

Recipe Directions for Mom's Chicken Salad

  1. Place a colander over a bowl and line the colander with a coffee filter. Then place the yogurt in the coffee filter. Put the entire thing in the refrigerator for a least 8 hours (24 hours is better).

  2. Dice up the carrots, onions, celery, and pepper. The finer the better.

  3. Mix all the ingredients together.
