Mom's Chicken and Rice Recipe

This is something my mother made for me all throughout my childhood. It's a great chicken soup for when a family member is under the weather and super easy to make.

Recipe Ingredients for Mom's Chicken and Rice

2 cup,+chopped+or+diced chicken breasts
8 celery stalks
4 large carrots
1 onion
2 chicken bouillon cubes
3 cups rice
8 cups water
1 can cream of mushroom
1 can mushrooms

Recipe Directions for Mom's Chicken and Rice

  1. If the chicken breast you've chosen has both bone and skin, please remove the skin.

  2. In a big cooking pot set to boil 8 cups of water. Add 1 or 2 skinless whole chicken breasts (if possible with the bone) to the water.

  3. As chicken boils dice celery, onion, and carrots and add to pot along with the can of mushrooms.

  4. Remove a chicken breast and test to see if it's cooked all through. When breast is fully cooked remove and cut into cubes.

  5. Add bouillon cubs and let vegetables cook for ten minutes on their own. When veggies are cooked add rice and cream of mushroom.

  6. Stir occasionally (to prevent the rice from sticking) until rice is cooked and no longer firm.

  7. Add 2 cups of the cubed chicken to the soup and stir in. Serve immediately and enjoy!
