Delicious healthier version of a old favorite Mexican dish.

Recipe Ingredients for Mom's Chicken Enchiladas

1 lb boneless skinless chicken breast
8 corn tortillas
1 c shredded lowfat cheese
30 oz can red enchilada sauce
1/2 c light sour cream
4 oz sliced black olives
1 tomato, diced
1 jalapeno, seeded and diced
4 green onions, sliced
2 c shredded lettuce
1/4 c cilantro, chopped

Recipe Directions for Mom's Chicken Enchiladas

  1. Spray 13x9" pan with nonstick spray. Set aside.

  2. Boil chicken breasts until no longer pink in the center, about 20 minutes. Let cool slightly, then shred with 2 forks. Set aside.

  3. Spray a nonstick skillet with nonstick spray. Saute jalapeno, cilantro and green onion for 2 minutes over medium high. Add chicken and 10 oz enchilada sauce. Mix thoroughly.

  4. Heat remaining enchilada sauce in a medium bowl in microwave, until warm. Preheat oven to 350.

  5. Dip corn tortilla into enchilada sauce. Spread with 1/8 of the chicken mixture. Roll up and set seam side down in prepared pan. Continue with remaining tortillas.

  6. Spread any remaining sauce over enchiladas. Top with cheese.

  7. Bake for about 20 minutes, until heated through.

  8. To serve, plate 1/2c shredded lettuce, top with 2 enchiladas then garnish with 1/4th of desired toppings~tomato, light sour cream, black olives and salsa.
