Super yummy chicken and dumplings with canned biscuits! Makes the dumplings just perfect every time!!

Recipe Ingredients for Mom's chicken and Dumplings

500 g chicken
10 Buttermilk Biscuits
1 c cream of chicken soup
32 oz chicken stock
1 1/2 c fat free milk
1/2 t poultry seasoning
1/2 t pepper
1/2 stick butter
1/4 c flour
3/4 c fat free milk
7 carrots
7 stalks celery

Recipe Directions for Mom's chicken and Dumplings

  1. Peal rotisserie chicken and chop chicken.

  2. Cut biscuits in half and lay out so they are not touching, roll each biscuit half into a tube.

  3. Slice carrots and celery.

  4. Combine chicken stock, cream of chicken, milk, poultry seasoning, carrots, celery and black pepper. Bring to a full boil.

  5. Add butter, reduce heat to medium so it simmers but doesn't boil.

  6. When butter has melted start dropping in the biscuit. Stir occasionally and let simmer while preparing thickener. Combine 1/4 c flour with 3/4 cup milk and whisk till smooth, pour into simmering liquid.

  7. Slowly stir in thickener. Once the liquid begins to thicken, add diced chicken. Let this mixture cook covered for approximately 20 minutes, stirring occasionally. When biscuits are no longer doughy but firm, it is ready.
