Recipe Ingredients for Mom's Carrot Cake

2 c flour
2 t baking powder
1 1/2 t baking soda
1 t salt
2 t cinnamon
2 c sugar
1 1/2 c applesauce
4 eggs
2 c grated carrots
20 oz pineapple
1/2 c walnuts
1 c coconut
1 c raisins
8 oz low fat cream cheese
1 t vanilla
1 lb powdered sugar
1 t lemon juice

Recipe Directions for Mom's Carrot Cake

Sift dry ingredients & add wet. Stir in carrots pineapple, nuts, coconut and raisins. Bake in 9 x 13 pan at 350 for 35-40 minutes
