My mother's recipe for Caesar salad. It is delicious. (For a low calorie version look for Nancy's Caesar Salad)

Recipe Ingredients for Mom's Caesar Salad

1 head Romaine Lettuce
4 cloves garlic
6 tablespoons canola oil
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
6 tablespoons parmesian cheese
1/2 cup croutons
1 egg yolk

Recipe Directions for Mom's Caesar Salad

  1. Put a saucepan of water on the stove.

  2. When water comes to a boil, put in egg and boil for 100 seconds. (According to my mother the original recipe called for raw egg yolk, but since raw egg is not safe this is too kill any bacteria. Do not over cook you need a runny yolk.)

  3. Set egg aside to cool.

  4. While waiting for water to boil wash lettuce, and cut or tear into small pieces. Set aside in colander to dry.

  5. Chop garlic into small pieces.

  6. Place garlic, salt, and canola oil in blender.

  7. Blend on high for 30 seconds.

  8. Put lettuce in salad boil. Pour oil over lettuce. Do not pour in large chunks of garlic.

  9. Put red wine vinegar in blender with any large chunks of garlic left over. Blend for 30 seconds.

  10. Pour vinegar over lettuce.

  11. Break open egg. Put just the egg yolk into the salad.

  12. Mix the salad together breaking yolk.

  13. Lastly, add parmesian, croutons and fresh ground pepper.
