My Mom made this for breakfasts using real sausage and crescent rolls, we made some modifications, using soy protein and sausage-y spices, and still found it scrumptious, AND healthy!

Recipe Ingredients for Mom's Breakfast Casserole

12 oz ground meat substitute
2 cup egg substitute
6 oz shredded mozzerella cheese
6 oz shredded cheddar cheese
1 tsp red pepper
1 tsp sage
1 Salt and pepper to taste

Recipe Directions for Mom's Breakfast Casserole

  1. Mix and put in 13 X 9 glass pan. Bake at 350 for half an hour or until eggs are not liquidy. Remove from oven and let set for 5 minutes.

  2. For a treat, line the glass dish with a can of crescent rolls.
